Grčka musaka / Greek moussaka

Potrebno :

– 4 patlidžana
– morska so
– maslinovo ulje
– 2 glavice crnog luka
– 900 g goveđeg mlevenog mesa
– 700 ml seckanog paradajza sa sokom
– 3 glavice belog luka
– 6-8 celih karanfilića
– pola kašičice mlevenog cimeta / ili manji štapić
– malo vegete
– 2 lovorova lista
– 200 g rendanog sira
– 1 kafena šolja hlebnih mrvica
– 1/2 kafene šolje crvenog vina
– biber
– bešamel sos

1. Patlidžan oguliti, iseći na kolutove debljine oko 7 mm, posoliti i ostaviti.

2. Bešamel : maslac/ulje grejati; dodati malo brašna, pržiti kratko; dodati polako mleko i kuvati da se zgusne; posoliti, pa dodati rendani sir (priprema bešamel sosa je kod mene otprilike, zavisno od toga koliko mnogo ga volite u jelima; ja volim više)

3. Meso : luk propržite na ulju; dodajte meso; nakon par minuta, dodati i sve drugo – paradajz, pola šolje hlebnih mrvica, so, biber, beli luk, cimet, karanfilić, lovorov list, vegetu, vino; dobro izmešati i krčkati dok tečnost ne ispari (oko 45 min).

4. Patlidžan ocediti od vode, obrisati, preliti sa malo ulja, pa peći po malo sa svake strane.

5. Ređati (u nauljenu tepsiju i posutu hlebnim mrvicama) : sloj patlidžana – meso – patlidžan – onda bešamel preko svega.

6. Peći na 180’C – oko 30 min.

 

Ingredients :

– 4 eggplants
– sea salt
– olive oil
– 2 onions
– 900 g beef
– 700 g chopped tomato with sauce
– 3 garlic cloves
– 6-8 whole cloves
– 1/2 tsp cinnamon powder or 1 small stick
– 2 bay leaves
– 200 g grated mozzarella cheese
– 1 cup breadcrumbs
– 1/2 cup red wine
– pepper
– bechamel sauce

1. Peal eggplant, salt it and leave aside.

2. Bechamel sauce : heat 2 tbsp of oil (or butter), add 3 tbsp flour, slowly add milk until becomes thick. Add grated cheese. (these are approximate amounts, depends how much of bechamel you like on your dishes, I like more!)

3. Meat : heat oil, add onion, saute few minutes. Add meat and brown it. Add the rest of ingredients : tomato, half of the prepared breadcrumbs, salt, pepper, garlic, cinnamon, cloves (I prefer to add these spices in grounded form), bay leaves, wine. Cook until all liquid evaporates (about 45 minutes).

4. Wipe water of eggplants, brush them with little bit of oil and grill.

5. Prepare baking pan : oil it and sprinkle with breadcrumbs. It goes : eggplant / meat / eggplant / bechamel.

6. Preheat oven on 180’C. Bake for about 30 minutes.

Pita od tikvica / Courgettes pie

Potrebno :

– oko 1 kg mladih tikvica
– 50 grama brašna
– 100 g kukuruznog brašna (krupnije mleveno, za palentu)
– 1 kesica praška za pecivo
– 5 jaja
– 250 g svežeg sira (ja sam stavila feta sir:pavlaku=1:1)
– 1 kašičica začina koji volite
– so, biber

1. Tikvice izrendati (ne soliti).
2. Pomešati brašno, kukuruzno brašno i prašak za pecivo.
3. Umutiti jaja, sir i začine. Dodati u smesu od brašna i na kraju umešati tikvice.
4. Tepsiju namazati puterom i posuti kukuruznim brašnom. Uliti smesu.
5. Peći na 180’C, oko 35 minuta.

 

 

Ingredients :

– about 1 kg courgettes
– 50 g flour
– 100 g corn meal
– 1 tbsp baking powder
– 5 eggs
– 250 g cheese (ricotta; I’ve put feta cheese mixed with turkish labnah)
– 1 tsp spices you like
– salt, peper

1. Grate courgettes (do not salt them).
2. Mix flour, corn meal and baking powder.
3. Combine eggs, cheese and spices. Add flour mixture and courgettes at the end.
4. Prepare baking pan – butter it and spinkle with corn meal. Pour butter in it.
5. Bake at 180’C, about 35 minutes.

Pileće belo meso u jogurtu / Chicken breast in yogurt

Potrebno :

– 500 g pilećeg (ili ćurećeg) belog mesa
– 4 dl jogurta
– 100 g rendanog trapista (ili mocarela i sl.)
– 100 g prezli
– 2 kašike peršuna (suv ili svež)
– biber, so
– ulje

Meso iseci na šnicle.

Pomešati sir, peršun i prezlu.

Šnicle pobiberiti i posoliti, umakati u jogurt i uvaljati ih u smesu sa sirom.

Posudu podmazati uljem, složiti meso, ostatak jogurta i smesu od sira preliti preko mesa i prekriti folijom.

Peći na 200’C, oko 20 minuta.

Skinuti foliju i vratiti šnicle u rernu da dobiju zlatnu boju.

 

 

Ingredients :

– 500 g chicken (or turkey) breast
– 4 dl yogurt
– 100 g kashkaval  (or mozzarella, etc.)
– 100 g bread crumbs
– 2 tbsp parsley (fresh or dried, finely chopped)
– salt, pepper
– oil

 
Cut meat in thin slices.

Combine cheese, parsley and bread crumbs.

Salt and pepper meat, dip in yogurt and then in cheese mixture.

Oil casserole dish, put meat in, spread the rest of yogurt and cheese mixture over it. Cover with foil.
Bake at 200’C, about 20 minutes.

Remove foil and return dish in the oven to get nice golden crust.

Kolačići od jabuke sa karamelom / Apple cookies with caramel


Potrebno :

*mere su originalno pisane u cups, a ja sam ih ovde pretvorila u grame

– 171 g neslanog putera

– 100 g šećera

– 100 g braon šećera

– 1 jaje

– 1 kašičica vanile

– 1/2 kašičice karamel ekstrakta

– 1 kašičica sode bikarbone

– 1 kašičica soli

– 306 g brašna

– 1 srednje velika jabuka – rendana

– 85 g badema i oraha – lomljenih

– 1 kašika braon šećera

– karamel sos

– crna i bela čokolada za ukrašavanje

1. Pomešajte lomljene orahe, bademe i kašiku braon šećera.

2. Umutite penasto puter i šećer (oba).

3. Dodajte jaje i ekstrakte vanile i karamele; promešajte dobro.

4. Pomešajte u posudi suve sastojke : brašno, sodu, so. Umešajte u to rendanu jabuku.

5. Pomešajte smesu od putera i smesu od brašna i jabuke. Testo će biti lepljivo i gusto.

6. Vadite po jednu kašiku testa, oblikujte lopticu, uvaljajte u mešavinu oraha, badema i šećera.

7. Stavljajte loptice na pleh (obložen peki papirom) i pecite na 175’C oko 15-17 minuta.

8. Kad ih izvadite iz rerne, napravite zadnjim delom kašike malo udubljenje na svakom kolačiću, koje ćete – kada se prohlade – napuniti karamel sosom.

Ingredients :

– 3/4 cup unsalted butter

– 1/2 cup granulated sugar

– 1/2 cup brown sugar

– 1 egg

– 1 tsp vanilla extract

– 1/2 tsp caramel extract (flavoring)

– 1 tsp baking soda

– 1 tsp salt

– 2 1/4 cup flour

– 1 medium size apple – grated

– 1 cup almond & pecan – crushed

– 1 tbs brown sugar

– caramel sauce

– black & white chocolate for decoration

1. Mix almonds, pecan nuts & sugar.

2. Cream butter and sugar (both kinds).

3. Add extracts – vanilla and caramel. Mix well.

4. Combine dry ingredients : flour, salt and soda. Mix it with grated apple.

5. Combine butter  and flour mixtures. Dough will be sticky and firm.

6. Take one spoon of dough, make a little ball and coat it well in nuts and sugar mixture.

7. Bake cookies at 175’C for about 15-17 minutes.

8. When you take them out of the oven, make a little impression with the back side of the spoon in the middle of every cookie. When cookies are cooled, fill impressions with caramel sauce and drizzle cookies with both kinds of chocolate.

Chocolate brownie


 

Potrebno :

– 120 g nezaslađene čokolade, iseckane sitno
– 113 g neslanog putera, seckanog na komadiće
– 200 g šećera
– 1 kašičica vanila ekstrakta
– 2 jaja
– 95 g brašna
– 1/4 kašičice soli

Čokoladni preliv :

– 90 g polu-slatke čokolade (možete staviti i belu čokoladu)
– 80 ml slatke pavlake
– 1 (14 g) kašika putera

1. Rernu zagrejte na 165’C. Teflonsku tepsiju poprskajte sprejem protiv lepljenja. (ova količina je za manju tepsiju – oko 20×20 cm)

2. Otopite čokoladu i puter na pari.

3. Sklonite sa vatre i dodajte tome šećer. Dodajte i vanilu, kao i jaja – dodajući jedno po jedno, muteći dobro posle dodavanja svakog.

4. Dodajte brašno i so.

5. Uspite u pripremljenu tepsiju i pecite oko 25 minuta. Ostavite da se ohladi.

6. Ganache : otopite čokoladu, slatku pavlaku i puter nad parom. Sklonite sa vatre i ostavite da se ohladi do sobne temperature. Premažite kolač.

 

Ingredients :

– 120 g unsweetened chocolate, chopped
– 113 g unsalted butter, cut into pieces
– 200 g sugar
– 1 tsp vanilla extract
– 2 eggs
– 95 g flour
– 1/4 tsp salt

Chocolate ganache :

– 90 g semi-sweet chocolate (you can use white chocolate as well)
– 80 ml cream
– 1 (14 g) tbsp butter

1. Preheat oven on 165’C. Spray with a non-sticking spray small baking pan (aprox. 20×20 cm)

2. Melt chocolate & butter over steam of simmering water.

3. Remove from heat and add sugar. Add vanilla and eggs – one by one, beating well after each.

4. Add flour & salt.

5. Pour into prepared baking pan and bake for about 25 minutes. Leave to cool.

6. Ganache : melt chocolate, cream and butter over steam. Move from heat and leave to cool to room temperature. Spread over brownie.

Čokoladne kuglice sa višnjama / Chocolate-cherry balls


Potrebno :

– 100 g prah šećera

– 100 g rendane čokolade

– 200 g mlevenih oraha

– 1 belance

– višnje

– kristal šećer

Umutiti penasto belance i povezati sa prah šećerom, čokoladom i orasima. Od mase praviti kuglice, unutar svake staviti po jednu višnju i uvaljati u kristal šećer.

Ingredients :

– 100 g icing sugar

– 100 g grated chocolate

– 200 g grounded walnuts

– 1 egg white

– sour cherries

– granulated sugar

Whisk egg white. Combine it with icing sugar, chocolate and nuts. Make small balls,  put inside each one cherry and roll it in sugar.

‘Markiza’ torta / ‘Markiza’ torte


 

Potrebno :

– 2 pakovanja piškota (otprilike 200 g)
– 250 g putera
– 9 jaja
– 300 g čokolade
– 250 g šećera
– šolja mleka (oko 2 dl – za umakanje piškota)
– ekstrakt ruma
– 500 g slatke pavlake (ili šlag, za dekoraciju)

1. Posudu u koju ćete slagati piškote premažite puterom; mleko pomešati sa rumom i u njega valjati piškotice i slagati ih na dno (možete uzeti neku posudu kojoj se skidaju stranice, za lepši efekat, pa slažite piškote po dnu i sa strane).

2. Odvojiti belanca i žumanca; otopiti čokoladu na pari; umutiti penasto puter i žumaca (masa mora biti ujednačena), onda polako dodati otopljenu čokoladu i miksirati dok se ne ujednači.

3. Umutiti belanca i šećer u čvrst šne i onda ga polako dodati masi od čokolade i mutiti na najmanjoj brzini miksera (ili polako žicom, da se lepo rasporedi).

4. Masu sipati u posudu koju ste spremili, obloženu piškoticama; ova torta treba da stoji u zamrzivaču.

5. Pre služenja tortu premazati šlagom.

 

 

Ingredients :

-about 200 g ladyfingers
– 250 g unsalted butter
– 9 eggs
– 300 g dark chocolate
– 250 g sugar
– about 2 dl milk (for dipping ladyfingers)
– rum extract
– 500 g whipped cream

 
1. Butter the tray where you will make the cake. Line it with ladyfingers – on the bottom and on the sides (if you have a baking pan with removable sides, it’s better)

2. Separate egg whites and yolks.  Melt chocolate on the steam. Whip butter and egg yolks, then  slowly add melted chocolate and mix until smooth.
3. Whip egg whites and slowly add them to chocolate mass, mix carefully with whisk.

4. Pour it in prepared pan with ladyfingers and freeze it. This cake should stay in freezer.

5. Before serving, coat it with whipped cream.

 

Pileći rolat / Chicken roulade



Potrebno :

– pileće belo meso
– senf
– so, biber
– sir (kačkavalj, mocarela…) ili tost sir
– masline
– šunka

 

1. Isecite pileće meso na tanje snicle, posolite i pobiberite. Poređajte meso tako da se šnicle preklapaju malo i da ih posle možete lepo uviti u rolnu.

2. Premažite meso senfom.

3. Poslažite tanke komade šunke preko mesa.

4. Pobacajte rendani sir (kačkavalj) ili poslažite tost sir preko šunke.

5. Poređajte masline preko svega, u jednom redu, duž citave površine.

6. Uvijte rolatić, premažite ga ponovo senfom, uvežite ga kulinarskim kanapom, stavite ga u uljem podmazanu tepsiju za pečenje i podlijte malo vode.

7. Pecite na 200’C, oko 25 minuta.

8. Kad se prohladi, poskidajte kanap i secite na trake.

 

Ingredients :

– chicken breast
– mustard
– salt, pepper
– grated cheese (kashkaval, mozzarella…) or toast cheese
– olives
– ham

1. Cut chicken breast in thin slices, sprinkle it with salt and pepper. Put slices to overlap each other, so you can roll it later nicely.

2. Spread little bit of mustard on the meat.

3. Put ham over meat.

4. Add chese on top.

5. Add olives in one row, along the whole length of the meat.

6. Roll the meat carefully, spread mustard over it, tie it with culinary rope, put it in oiled baking tray and add little bit of water in.

7. Bake for 25 minutes on 200’C.

8. Let it cool, remove ropes and cut it in slices.

‘Reform’ torta / ‘Reform’ torte


Potrebno :

Kora :
– 5 belanaca

– kašičica sirćeta ili limuna

– 8 kašika šećera

– 1 kašika brašna

– 8 kašika mlevenih oraha / lešnika (pržite ih pre upotrebe za lepši ukus)

Pet belanaca je za samo jednu koru, treba napraviti još dve.

Krem :

– 15 žumanca

– 15 kašika šećera

– 3 kašike mleka

– 200 gr čokolade za kuvanje

– 400 g putera / margarina

 

Postupak :

1. Belanca dobro umutiti. Dodati im kašičicu sirceta/limuna.

2. Belancima dodati 8 kašika šećera. Kada se to razmuti, dodati jednu kašiku brašna. Potom dodati 8 kašika oraha/lešnika. (to umešati varjačom, ne mikserom)

3. Tepsiju obložiti papirom za pečenje, izliti masu i poravnati. Sušiti u već zagrejanoj rerni na 150’C – dok se krajevi ne počnu odvajati od ivica tepsije (nekih 20-tak minuta).

4. Umutiti žumanca sa šećerom, dodati 3 kašike mleka, ubaciti odmah i čokoladu i skuvati na pari (kuvati toliko da se šećer i čokolada otope i malo zgusne). Ostaviti da se skroz ohladi.

4. Kad je krem skroz hladan, umutiti više od pola margarina, pa dodati hladan krem, da se dobije kompaktna masa. Ako je potrebno, dodajte i ostatak margarina.

5. Ređati kora – krem – kora – krem, pa na kraju ukrasiti po želji.

 

‘REFORM’ TORTE

Ingredients :

Layers :

–  5 egg whites

– 1 tsp lemon juice or vinegar

– 8 tbsp sugar

– 1 tbsp flour

– 8 tbsp grounded walnuts or hazelnuts (for better taste, roast them before use)

This is only for one layer, do the same for another two.

Cream :

– 15 egg yolks

– 15 tbsp sugar

– 3 tbsp milk

– 200gr chocolate

– 400 g unsalted butter

Procedure :

1. Whisk egg whites with lemon juice/vinegar.

2. Add sugar to the egg whites. Also add walnuts/hazelnuts – from this moment, mix with spoon.

3. Put parchment paper on the baking tray, pour egg whites mass and bake in preheated oven (150’C) until edges start to detach from the baking tray (about 20 minutes)

4. Mix egg yolks with sugar, add milk, add chopped chocolate and cook on steam (long enough for sugar and chocolate to melt, and thick a little bit). Leave to cool completely.

4. Whisk more than half amount of butter and mix with cold cream. Add the rest of butter if needed.

5. Put layer on the tray, spread cream, again layer… until you have ingredients. Decorate upon your wish.

Bajadera od belog pilećeg mesa / Chicken breast ‘bajadera’



Potrebno :
– oko 500 g belog pilećeg / ćurećeg mesa
– senf
– 1 pavlaka (2 dl)
– 100 g kačkavalja / tost sir (lakši za rukovanje, jer je već isečen na listiće)
– 200 g suvog vrata
– 2 jaja
– so

1. Izlupajte šnicle od belog mesa, na oko 7 mm debljine. Posolite i poređajte u podmazan pleh/vatrostalnu tepsiju.
2. Meso premažite senfom , pospite belim lukom – po želji.
3. Preko toga, stavite suvi vrat, pa i njega premažite senfom. Listiće kačkavalja stavite preko toga.
4. Umutite jaja + pavlaku – prelijte preko toga svega.

5. Rerna na 200’C , pecite oko 30 min.

Pustite da se skroz ohladi, jer se onda izuzetno lepo seče.

 

CHICKEN/TURKEY BREASTS ‘BAJADERA’

Ingredients :
– 2 pieces of chicken breasts (1/2 kg – more/less; you can use turkey instead)
– mustard
– 250 ml yogurt
– 100 g toast cheese
– 200 g ham
– 2 eggs
– salt

Beat meat (thickness 0,7 mm). Salt it and put in oiled casserole.
Spread mustard over meat in thin layer. Spread little bit of garlic over meat.
Put ham over meat. Again, spread a little bit of mustard.
Put cheese over ham (any kind of hard cheese or toast cheese).
Whisk eggs with yoghurt and spread over all.
Oven on 200’C, bake for about 30 min.
Serve it hot or cold. When it is cold, you can cut it nicely, like cake.
