Pita od tikvica / Courgettes pie

Potrebno :

– oko 1 kg mladih tikvica
– 50 grama brašna
– 100 g kukuruznog brašna (krupnije mleveno, za palentu)
– 1 kesica praška za pecivo
– 5 jaja
– 250 g svežeg sira (ja sam stavila feta sir:pavlaku=1:1)
– 1 kašičica začina koji volite
– so, biber

1. Tikvice izrendati (ne soliti).
2. Pomešati brašno, kukuruzno brašno i prašak za pecivo.
3. Umutiti jaja, sir i začine. Dodati u smesu od brašna i na kraju umešati tikvice.
4. Tepsiju namazati puterom i posuti kukuruznim brašnom. Uliti smesu.
5. Peći na 180’C, oko 35 minuta.

 

 

Ingredients :

– about 1 kg courgettes
– 50 g flour
– 100 g corn meal
– 1 tbsp baking powder
– 5 eggs
– 250 g cheese (ricotta; I’ve put feta cheese mixed with turkish labnah)
– 1 tsp spices you like
– salt, peper

1. Grate courgettes (do not salt them).
2. Mix flour, corn meal and baking powder.
3. Combine eggs, cheese and spices. Add flour mixture and courgettes at the end.
4. Prepare baking pan – butter it and spinkle with corn meal. Pour butter in it.
5. Bake at 180’C, about 35 minutes.

Muffins od tikvica / Courgettes muffins


Muffins od tikvica - presek

Potrebno :
– 250 g kukuruznog brašna
– 250 g glatkog belog brašna
– 2 kašičice praška za pecivo
– 1/2 kašičice sode bikarbone
– 1 kašičica soli
– grubo mleveni biber
– 250 g rendanog parmezana
– 125 ml jogurta
– 63 ml maslinovog ulja
– 2 jaja
– 250 g narendanih tikvica
– zacini po želji – ruzmarin, peršun…
– sir za punjenje – mogu oni trouglići (‘Zdenka’) ili bilo koji za koji mislite da je zgodan za punjenje
– susam po želji

1. Pomešati kukuruzno brašno, glatko brašno, prašak za pecivo, sodu, so, parmezan i biber

2. Pomešati jogurt, maslinovo ulje i jaja

3. Pomešati suve i mokre sastojke i dodati začine po zelji

4. Premazati uljem kalup za mafine i posuti malo kukuruznim brašnom (mogu se koristiti i korpice); u svaki kalup do pola staviti pripremljenu masu, onda komadić sira pa ponovo masu; od gore po želji staviti prženi susam

5. Rerna na 190’C stepeni – peći oko pola sata, dok ne porumene

Courgettes muffins

Ingredients :

– 250 g corn meal
– 250 g white all purpose flour
– 2 tsp baking powder
– 1/2 tsp baking soda
– 1 tsp salt
– grounded black pepper
– 250 g grated Parmigiano
– 125 ml yogurt
– 63 ml olive oil
– 2 eggs
– 250 g grated courgettes
– spices according to your taste – rosemary, parsley…
– soft cheese for filling
– roasted sesame seed

Preparation :

1. Mix corn meal, white flour, baking powder, baking soda, salt, Parmigiano and pepper

2. Mix yogurt, olive oil and eggs

3. Mix dry and wet ingredients and add spices. Add grated courgettes.

4. Oil muffin tin, sprinkle with corn meal (or you can use cake baskets). Pour mixture until 1/3 of muffin molds, then put some cheese on, again pour a little bit more of the mixture. Sprinkle with roasted sesame seed, if you like.

5. Oven on 190’C – bake about half an hour.

Musaka od patlidžana / Moussaka with eggplant


Musaka od patlidzana

Potrebno :
– patlidžan (jedan veliki; ili tikvice)
– pileće belo meso – oko 200 g
– 1 paprika crvena
– 1 jaje
– 1 pavlaka
– 1 dl jogurta

1. Patlidžan oguliti, iseći, posoliti, posuti začinom ‘Provansalska mešavina’ (Kotanyi)

2. Meso iseckati na sitne kocke, takođe začiniti pomenutim začinom, solju i pržiti na malo ulja

3. Mesu dodati papriku sečenu na trake

4. Patlidžan izgrilovati, pa ga poređati u tepsiju; preko njega mešavina mesa i paprike

5. Preliv : pomešati jaje, pavlaku i jogurt i preliti preko musake

6. Peći na 200’C nekih pola sata, možda i manje – da porumeni

Moussaka with eggplant

Ingredients :

– 1 big eggplant (or courgettes)
– chicken breast – about 200 g
– 1 red pepper
– 1 egg
– 2 dl sour cream
– 1 dl yogurt

Preparing :

1. Peel off eggplant, salt it a little bit and sprinkle with Kotanyi spice ‘Herbes de Provence’. Leave it for a few minutes.

2. Cut meat in small cubicles, sprinkle with salt and “Herbes de Provence’ and roast on little bit of oil.

3. Add pepper (cut in small peaces) to the meat. Roast for a few minutes.

4. Grill eggplant. When done, put it in the baking dish, cover with meat with pepper and again eggplant – if left any.

5. Topping : mix egg, sour cream and yogurt. Pour over moussaka.

6. Bake on 200’C, about half an hour – until gets nice colour.
