Pileći rolat / Chicken roulade



Potrebno :

– pileće belo meso
– senf
– so, biber
– sir (kačkavalj, mocarela…) ili tost sir
– masline
– šunka

 

1. Isecite pileće meso na tanje snicle, posolite i pobiberite. Poređajte meso tako da se šnicle preklapaju malo i da ih posle možete lepo uviti u rolnu.

2. Premažite meso senfom.

3. Poslažite tanke komade šunke preko mesa.

4. Pobacajte rendani sir (kačkavalj) ili poslažite tost sir preko šunke.

5. Poređajte masline preko svega, u jednom redu, duž citave površine.

6. Uvijte rolatić, premažite ga ponovo senfom, uvežite ga kulinarskim kanapom, stavite ga u uljem podmazanu tepsiju za pečenje i podlijte malo vode.

7. Pecite na 200’C, oko 25 minuta.

8. Kad se prohladi, poskidajte kanap i secite na trake.

 

Ingredients :

– chicken breast
– mustard
– salt, pepper
– grated cheese (kashkaval, mozzarella…) or toast cheese
– olives
– ham

1. Cut chicken breast in thin slices, sprinkle it with salt and pepper. Put slices to overlap each other, so you can roll it later nicely.

2. Spread little bit of mustard on the meat.

3. Put ham over meat.

4. Add chese on top.

5. Add olives in one row, along the whole length of the meat.

6. Roll the meat carefully, spread mustard over it, tie it with culinary rope, put it in oiled baking tray and add little bit of water in.

7. Bake for 25 minutes on 200’C.

8. Let it cool, remove ropes and cut it in slices.

‘Reform’ torta / ‘Reform’ torte


Potrebno :

Kora :
– 5 belanaca

– kašičica sirćeta ili limuna

– 8 kašika šećera

– 1 kašika brašna

– 8 kašika mlevenih oraha / lešnika (pržite ih pre upotrebe za lepši ukus)

Pet belanaca je za samo jednu koru, treba napraviti još dve.

Krem :

– 15 žumanca

– 15 kašika šećera

– 3 kašike mleka

– 200 gr čokolade za kuvanje

– 400 g putera / margarina

 

Postupak :

1. Belanca dobro umutiti. Dodati im kašičicu sirceta/limuna.

2. Belancima dodati 8 kašika šećera. Kada se to razmuti, dodati jednu kašiku brašna. Potom dodati 8 kašika oraha/lešnika. (to umešati varjačom, ne mikserom)

3. Tepsiju obložiti papirom za pečenje, izliti masu i poravnati. Sušiti u već zagrejanoj rerni na 150’C – dok se krajevi ne počnu odvajati od ivica tepsije (nekih 20-tak minuta).

4. Umutiti žumanca sa šećerom, dodati 3 kašike mleka, ubaciti odmah i čokoladu i skuvati na pari (kuvati toliko da se šećer i čokolada otope i malo zgusne). Ostaviti da se skroz ohladi.

4. Kad je krem skroz hladan, umutiti više od pola margarina, pa dodati hladan krem, da se dobije kompaktna masa. Ako je potrebno, dodajte i ostatak margarina.

5. Ređati kora – krem – kora – krem, pa na kraju ukrasiti po želji.

 

‘REFORM’ TORTE

Ingredients :

Layers :

–  5 egg whites

– 1 tsp lemon juice or vinegar

– 8 tbsp sugar

– 1 tbsp flour

– 8 tbsp grounded walnuts or hazelnuts (for better taste, roast them before use)

This is only for one layer, do the same for another two.

Cream :

– 15 egg yolks

– 15 tbsp sugar

– 3 tbsp milk

– 200gr chocolate

– 400 g unsalted butter

Procedure :

1. Whisk egg whites with lemon juice/vinegar.

2. Add sugar to the egg whites. Also add walnuts/hazelnuts – from this moment, mix with spoon.

3. Put parchment paper on the baking tray, pour egg whites mass and bake in preheated oven (150’C) until edges start to detach from the baking tray (about 20 minutes)

4. Mix egg yolks with sugar, add milk, add chopped chocolate and cook on steam (long enough for sugar and chocolate to melt, and thick a little bit). Leave to cool completely.

4. Whisk more than half amount of butter and mix with cold cream. Add the rest of butter if needed.

5. Put layer on the tray, spread cream, again layer… until you have ingredients. Decorate upon your wish.

Bajadera od belog pilećeg mesa / Chicken breast ‘bajadera’



Potrebno :
– oko 500 g belog pilećeg / ćurećeg mesa
– senf
– 1 pavlaka (2 dl)
– 100 g kačkavalja / tost sir (lakši za rukovanje, jer je već isečen na listiće)
– 200 g suvog vrata
– 2 jaja
– so

1. Izlupajte šnicle od belog mesa, na oko 7 mm debljine. Posolite i poređajte u podmazan pleh/vatrostalnu tepsiju.
2. Meso premažite senfom , pospite belim lukom – po želji.
3. Preko toga, stavite suvi vrat, pa i njega premažite senfom. Listiće kačkavalja stavite preko toga.
4. Umutite jaja + pavlaku – prelijte preko toga svega.

5. Rerna na 200’C , pecite oko 30 min.

Pustite da se skroz ohladi, jer se onda izuzetno lepo seče.

 

CHICKEN/TURKEY BREASTS ‘BAJADERA’

Ingredients :
– 2 pieces of chicken breasts (1/2 kg – more/less; you can use turkey instead)
– mustard
– 250 ml yogurt
– 100 g toast cheese
– 200 g ham
– 2 eggs
– salt

Beat meat (thickness 0,7 mm). Salt it and put in oiled casserole.
Spread mustard over meat in thin layer. Spread little bit of garlic over meat.
Put ham over meat. Again, spread a little bit of mustard.
Put cheese over ham (any kind of hard cheese or toast cheese).
Whisk eggs with yoghurt and spread over all.
Oven on 200’C, bake for about 30 min.
Serve it hot or cold. When it is cold, you can cut it nicely, like cake.

Piletina orli / Orli chicken


Potrebno :
– 800 g pilećeg belog mesa
– 1 dl mleka
– 3 dl piva
– 3 jaja
– 300 g brašna
– ulje za prženje
– so

1. Šnicle iseći na trake, pa posoliti, i preliti mlekom – ostaviti u frižideru da prenoći.

2. Sutradan, ocediti meso od mleka. U deo pripremljenog brašna (120 g) uvaljati komade mesa.

3. Ostatak brašna (180 g) razmutiti sa žumancima i malo piva, pa dodati ostatak pripremljenog piva. Belanca umutiti u sneg – spojiti ih sa prethodom masom.

4. Komadiće mesa provući kroz ovu masu, pa pržiti na zagrejanom ulju.

Servirajte uz krokete od krompira i tartar sos sa svežim krastavcima.

 

ORLI CHICKEN

Ingredients :
– 800 g chicken breasts
– 1 dl milk
– 3 dl beer
– 3 eggs
– 300 g flour
– oil for frying
– salt

1. Cut chicken into pieces.

2. Salt them, put into milk and leave over night in refrigerator.

3. Tomorrow, take meat out of milk. Coat meat in one part of the flour  (120 g).

4. Mix the rest of the flour (180 g) with egg yolks and 2/3 of beer, then slowly add the rest of the beer. Whisk egg whites and add them to beer mixture.

5. Pull meat trough the mixture and fry in hot oil.
Serve with potato croquets and tartar sauce made of fresh cucumbers.

Rolnice od cimeta / Cinnamon rolls


Potrebno :

– 256 g brašna
– 1.5 kašičica praška za pecivo
– 1/2 kašičice sode bikarbone
– 1/2 kašičice soli
– 32 g putera
– 96 g buttermilk (možete koristiti slatku pavlaku umesto toga)
– 2 kašike otopljenog putera
– 64 g šećera (braon, ali može i običan)
– 2 kašike cimeta (+ punu kašiku kakao-a zbog čokoladnog ukusa; po želji)
– 64 g grožđica (po želji, ne mora)
– 128 g šećera u prahu
– 2 kašike buttermilk-a (opet, može zamena)
– 1 kašičica putera
– 1/2 kašičice vanile (ekstrakt)

Procedura :

1. Renu zagrejati na 250 stepeni

2. Pomešati brašno, prašak za pecivo, sodu i so

3. Dodati puter i mesiti dok se ne formira mrvičasto testo

4. Uliti buttermilk i mešati dok se ne formira lopta od testa

5. Mesiti na pobrašnjenoj podlozi da se testo lepo formira, a onda razviti u pravougaonik (23×40 cm)

6. Testo premazati sa 2 kašike otopljenog putera. Posuti cimet i šećer, po želji i grožđice.

7. Črvsto uviti testo u rolnicu, malo pritisnuti kraj (da se ne odmota), i seći testo na komade (oko 4 cm debljine)

8. Rolnice poslagati na papir za pečenje. Peći dok ne dobiju lepu zlatnu boju (10-tak minuta, pratiti)

9. Dok se peku, pripremiti preliv : pomesati šećer u prahu, buttermilk, puter i vanilu – tek malo mešati na vatri da se dobije staklasta, glatka masa. (količinom buttermilka se reguliše gustina sosa)

10. Savet : za bolji ukus rolnica, nakon što ih prelijete sosom, stavite ih u kutiju i poklopite, nekih sat vremena pre služenja.

 

Cinnamon rolls

Ingredients :

– 256 g flour
– 1.5 tsp baking powder
– 1/2 tsp baking soda
– 1/2 tsp salt
– 32 g butter
– 96 g buttermilk
– 2 tbsp melted butter
– 64 g brown sugar
– 2 tbsp cinnamon (+ 1 tbsp cocoa)
– 64 g raisins (if you like)
– 128 g icing sugar
– 2 tbsp buttermilk
– 1 tsp butter
– 1/2 tsp vanilla extract

1. Heat the oven on 250’C.

2. Combine flour, baking powder, baking soda and salt.

3. Add butter to flour mixture, until you get crumbly texture. Add buttermilk and mix until you get ball from dough.

4. Knead on floury working space, then roll out in rectangular shape (23×40 cm)

5. Spread melted butter on the dough. Sprinkle cinnamon and sugar. If you like, add raisins.

6. Make a roll, and cut pieces about 4 cm thick.

7. Put rolls on baking paper on the pan. Bake until they get nice golden colour (about 10 minutes).

8. While rolls are baking, prepare sauce : combine sugar, buttermilk, vanilla and butter – heat until well combined and get smooth texture. Modify thickness with adding more buttermilk. Spread over rolls when they come out of the oven.

9. Tip : for better taste, put rolls in container with lid and cover for about an hour before serving.

Chocolate brownie


Potrebno : 

– 115 g čokolade (sto veći procenat kakao-a, to bolje)

– 115 g putera neslanog

– 256 g šećera

– 15 g vanila šećera (ekstrakt, svejedno)

– 15 g soli (prstohvat)

– 2 hladna jajeta

– 60 g brašna

1. Puter i čokoladu otopite na vatri. Sklonite sa vatre pa onda dodajte : šećer, vanila šećer i so u to i mutite da se dobije kompaktna masa. Šećer se neće otopiti možda skroz, ali to nije ni važno.

2. Ubacite jaja i na kraju brašno – pa sve mešajte da se dobije glatka masa (jaja malo razmutite pre nego što ih dodate u smesu).

3. Pleh – obloženo dno pek papirom, a stranice namazane puterom. Rerna na 200’C, pecite nekih 20 min.

Uz ovo posluzite slag ili mileram i sveze voce.

 

CHOCOLATE BROWNIE

Ingredients

– 115 g chocolate (bigger percent of cocoa – it’s better)

– 115 g unsalted butter

– 256 g sugar

– 15 g vanilla sugar or extract

– 15 g salt

– 2 cold eggs

– 60 g flour

1. Melt chocolate and butter. Move from heat and add : sugar, vanilla and salt. Mix until well combined. Sugar may not be melted right away, but it will be ok that way.

2. Add eggs and flour – mix until you get smooth texture.

3. Put baking paper on your pan and butter the sides. Heat oven on 200’C and bake for about 20 minutes.

Serve with cream, sour cream and some fresh fruit.

Fattoush – Lebanese salad


Fattoush - Lebanese salad

Potrebno :

– oko 150 – 200 g salate iceberg – iseckano na manje trake
– 1 veliki krastavac (ili 2 manja, svejedno) – seckano tanko (sa korom, zbog dekorativnosti)
– 2 paradajza srednje veličine (sitno seckano)
– oko 70 g seckanog peršuna
– oko 30 g listića mente
– 1/2 ili čitava (zelena) paprika – seckana na komadiće
– mladi luk (ili stariji, svejedno) – seckan na polumesečeve
– sumac (začin)
– u ovu salatu tradicionalno se dodaje pita hleb (arapski tanki hleb, kao lepinjica) koji se peče u rerni da porumeni, i onda isecka na komade i posipa po salati (ukoliko ne možete nabaviti ovaj hleb, onda kao alternativu možete upotrebiti krutone)

Dresing :

– 170 ml limunovog soka
– 170 ml maslinovog ulja
– 2-4 češnja belog luka, gnječenog
– 1 kašičica soli
– malo bibera

Sve sastojke za dresing pomešati i preliti preko seckanog povrća za salatu. Pobacati po salati komadiće pita hleba, ili krutone. Služiti odmah!

Fattoush – Lebanese salad

Ingredients :

– about 150 – 200 g iceberg salad – cut in stripes
– 1 big cucumber  – finely sliced
– 2 tomatoes – cut in pieces
– about 70 g fresh chopped parsley
– about 30 g mint leaves
– 1/2 or whole green pepper  – cut in stripes
– onion – cut in pieces
– sumac spice
– Arabic pita bread – cut in stripes and toasted until gets nice brown colour

Dressing :

– 170 ml lemon juice
– 170 ml olive oil
– crushed garlic
– 1 tsp salt
– pinch of black pepper

Cut all vegetables in pieces. Mix all ingredients for dressing and toss over veggies. Add Arabic bread on top. Serve immediately.
